Pomegranate Mixed Greens Salad
Don't be afraid to make the dressing ahead of time, the flavor just gets better after being chilled for a few days! This salad is the perfect compliment to any meal.

1 shallot, minced (about 2 tablespoons),1/2 c. olive oil,1/4 c. PAMA Pomegranate Liqueur,1 Tbsp. apple cider vinegar (or vinegar of choice),1 tsp. salt,1/2 tsp. (freshly ground) pepper,1 firm-ripe pear,1 Tbsp. Honey,8 c. (about 9 ounces) mixed baby salad greens, or greens of choice,1/2 c. crumbled blue cheese,1/4 c. toasted walnuts,Pomegranate seeds, Instructions:
Put shallot, olive oil, Pama Pomegranate Liqueur, honey, salt and pepper in a small jar with a tight fitting lid. Shake vigorously to dissolve honey and salt.Peel the pear if desired and cut the pear into matchsticks or thin slices. Put the salad greens in a large bowl and drizzle with half the dressing. Toss to coat the greens. Serve on individual plates and top with pear, blue cheese, walnuts and pomegranate seeds. Extra salad dressing can be used on another salad, or as a marinade for grilled chicken or beef. Makes about 1 cup dressing. Serves 4.
